Finally I found the time for a thorough test of my new Olympus gear.
The decision was made to go to Wittmund to catch the Farewell tour of the Transall (which turned out to a bit of a disappointment because the formation flew directly over the heads of the spotters).
Throughout the day the following was seen:

What camera and lenses did you try, and how are they performing in terms of sharpness/autofocus and noise ?

As said by Krazy, the camera I use, in this case, was an Olympus OM D 1 Mark II with the Olympus 100-400mm.
When you go to my Flickr site (see my first post) click on the photos. At the bottom of each photo you can see the information button (i). Click on it and you see the equipment and settings I use for that particularly photo.
I must say that I’m very satisfied with the results in terms of Sharpness.
The camera reacts very fast with moving objects, it snaps on every time on the subject very, very fast.
Noise performance. I mostly shoot aircraft in daylight so ISO’s settings can stay below 800. So noise isn’t an issue.
